Salad burnet herb (Sanguisorba minor) is a low-growing, 6- to 18-inch leafy plant that grows as a rosette.

It is used as an ingredient in both salads and dressings, having a flavor described as "light cucumber" and is considered interchangeable with mint leaves in some recipes, depending on the intended effect. Typically, the youngest leaves are used, as they tend to become bitter as they age.

Salad burnet has the same medicinal qualities as medicinal burnet (Sanguisorba officinalis). It was used as a tea to relieve diarrhea in the past. Called a favorite herb by Francis Bacon, it was brought to the New World with the first English colonists, even getting special mention by Thomas Jefferson.

Plant seeds in the fall. You can plant container-grown plants obtained from nurseries, or direct-sow seeds. Grow in full to part sun in well-amended soil and even, regular moisture. Feed occasionally with organic plant food. Harvest as needed. It will last throughout the cool season until the summer hits. Sometimes plants may perennialize (if they last through summer this happens best in semi-shaded conditions).
