Cauliflower is a large plant compared to broccoli, of which it superficially resembles. Typically, only the head is eaten – the edible white flesh sometimes called "curd" (with a similar appearance to cheese curd). The cauliflower head is composed of a white inflorescence meristem. The individual plant also gets very large and takes a longer time to develop. Allow at LEAST a foot between seedlings, or better, a foot and a half.

There are several varieties of cauliflower, differing in color from white to purple to orange and even green.

Grow Cauliflower in full to part sun, with enriched garden soil and even moisture. As the bud develops you may take some of the outer leaves and tie them around the bud to protect it and keep it white. Feed regularly with organic plant food. Start from seed indoors in late summer and plant out in September or October to give it enough time to develop. Pay attention to the number of days until harvest (most decent seed companies list the number of days to maturation).
